I hear ya. We have a backlog of dried mushrooms. Mostly because one family member doesn't like them, so don't add to dishes often.

I'm becoming a dehydrating nut! Zukes are just showing up in markets here. Dried a big bunch earlier from Costco. Fantastic in pasta sauce, soups, etc. even with rehydrating, they retain a slight crunch. And taste great. Shoulda done this years ago!

Do you dehydrate any of these?
