The Titan we fight in chapter 4 is called "Guardian". I assume that's what kind of Titan it is, as we can see multiple kinds in the chapter 2 cutscene.

Perhaps what type of a Titan made is judged by how much sustenance they received as an embryo? Either way, the idea came in part by how a species called the yeti crab gets nourishment from geysers in the deep, dark ocean. Additionally, a Titan in the ch 2 cutscene looks a lot like The Knight.

Sorry very late reply, but I imagine they work by having the Guardian Titan birth the other Titans asexually. I imagine they'd require a Dark World for sustenance, but they do not hold the Determination to make a Fountain. Therefore, they could likely possess and coerce Lightners to make them.
