Being genuine, especially with his odd mood fluctuations.
He is a good listener, but when it comes to sharing his own situations, he can be frustratingly cryptic or reserved. He doesn't believe that others can relate to what he is experiencing, or just find his condition too bizarre to understand.
He usually stays on the companions' good side by being useful around camp; more often than not doing chores without complaint and patching up items that were broken, or going through the loot and organizing it appropriately. But when it comes to opening up to others, its hard to tell if he is

A fight is more often than not the outcome... He will be more intimidating with his approach, and often threaten someone coldly to back off.
Intimidation tactics work best when you look someone in the eye, pop a seam on your arm and threaten to beat them to death with it. Works like "Frightened."
Iosef will try to negotiate his way out of a fight, if he can, especially if Winter's memories are the strongest influence. He doesn't have many scruples by default, so he will make deals, lie, or pay someone off if possible to avoid a skirmish. However, if Riven is the primary influence,

Being a sort of undead creature, it is uncertain if such things could effect him beyond being nuisances.

He hasn't experienced any real allergies so far, but he has found weaknesses to things like being submerged in water. His stitches don't like it.
He also finds fungal spores to be unpleasant, & being exposed to the Sussur tree rendered him immobile, as the elixir that runs through his veins froze.
He hasn't had many good experiences in his new existence...
It doesn't help that he makes others feel awkward with how his stitches can pop and he can suddenly lose a limb or something. It can be unsettling...
So he does acts of service for his companions to be helpful.
He does crave connection, but he often isolates himself. He is a creature of complications and contradictions, borne from an exile, a grieving man, a sickly bhaalspawn, and upon awakening into his new existence, was immediately placed into a servitude for the tyrant and discarded suddenly.

Iosef has a talent for sewing (for obvious reasons), so during downtime at the camp, he will often repair outfits that have been damaged in battle. Astarion has also instructed him on certain techniques as well.
Occasionally, Winter's habit of singing while he works manifests too.
Yes! One of Iosef's components is a tiefling named Riven. Though Kanon (Iosef's creator) would have prefered two horns, one of the warrior's horns was cracked off and lost in his last stand, giving Iosef an unbalanced look.

What inspires harmony amongst this fragments, or at least, Riven, Iosef (new), and Winter, is music and water.

Certain stimuli can suddenly evoke a powerful response out of nowhere that he doesn't understand. For example, seeing a black oleander will suddenly make him weep, despite swearing he has never seen the plant before (Riven's mother had a black orleander plant outside their house).

He often defaults to a servile mode out of a need for mundane tasks to occupy himself.
Sensations have begun to return, slowly but surely, and he has begun to enter a more "living" state of being, more animated than practically robotic... But it takes time.

If Kanon is the strongest, it works like the Urge; compulsion to inflict pain or malice out of nowhere.
So basically, he bounces between
Molded to be a servant for Gortash; a sort of backstabbing that Iosefkanon didn't see coming, so he has a sense of duty to those around him, but he is able to let petty crimes slip by. If Winter is the strongest influence, he is more sentimental and will be more kindhearted towards others in need,
