Co. Galway: Kilmacduagh monastery, Inchagoill (if they're running boats), Ross Errilly Abbey, Turoe Stone in Bullaun...

Ok, easy access options- Co. Clare: Corcomroe Abbey, Temple Cronan, Poulnabrone Dolmen (if you have to, its very small), all of these in and around the Burren.

Co. Sligo, Heapstown Cairn (Literally stars in Cath Maige Tuired), Dysert O'Dea, Carrowmore Megalithic Cemetery...

Not much Med in Dublin. St Audoens Church best preserved medieval structure, but it will still be closed in March. National Museum of Ireland is a must (free). Christchurch and Dublin Castle have bits of medieval in their crypts. Book of Kells (not free). Chester Beatty Library (free).
