I got hooked after reading Didion and Babitz by Lili Anolik. I admire her writing style and structure.

Boil whole potatoes (Yukon Gold) in the skin and when tender chill overnight. Peel and grate, fill the pan up without pressing it down at first (it will settle). Low heat and add little bits of butter around the edges as needed.
