Yesterday (Sep 30) and tonight we had our "soft" opening for friends/family and industry. We made a lot mistakes, made adjustments, and made fewer mistakes.

To our friends, family, and industry friends, THANK YOU for coming out to help us shake some bugs out (and forgive us our Square fumblings)...

Raspberry witbier, "Rosè," is in the kegs! We will be serving that next week during our openings!

In a surprise to us, our local King County health inspector was able to squeeze us in today!

Significance? We may now serve ours beers the way we intended: in specially selected glassware.

Our raspberry witbier is just about ready to keg! Here's a sample we drew. It is quite dry with a hint of fruit tartness, but tastes unmistakably raspberry and wit.
I would love some Pierre Robert and crackers right now!

We will be doing soft openings (friends/family and industry) Tuesday and Wednesday, and we will be open to everyone, starting Friday, October 3 at 3pm.

My apologies for going a bit dark for the past three weeks. We've been busy brewing as we start preparations for our soft opening later this month! Currently in the tanks: (unnamed) American Pale Ale, "Jimmy" Classic American Pilsner, and our "Rosé," a raspberry witbier. Next up: Apricot Saison.

Today we prep for our very first beer! Going easy on this one while we continue to learn the ins and outs of this system, so just a simple, (hopefully) drinkable (in summer heat) American pale ale. We'll be shooting for CAP this weekend. Then the Belgians!

We had a walk through of our system yesterday with D, the previous brewer. While it was a lot to take in all at once, I think with some practice sessions pushing water around, we should be ready to try to brew our first beer at the end of the week. Something simple like APA. Hoppy but easy-drinking

Countertop for our new bar are going in! We've opted for Paperstone, a recycled paper/resin composite [https://paperstoneproducts.com/products/]. This is going to be an amazing addition to our little space. Bar seating for FOUR! [Did I mention our taproom is darn small, err, I mean intimate?]

Just got word: WA Liquor and Cannabis Board has approved our license application! We can start brewing!!!

@teritroll.bsky.social met with J from the LCB yesterday (Friday) and reports that everything went well. So now I think we're just waiting for payment to post, and we should have our license to brew!

Oh, and I guess it is worth mentioning that a little bird told us that we might have some (good?) news on Friday.

While we've been waiting for the LCB, we've not been idle! We have nearly completed construction of our new bar -- which was templated this week by installers. We hope it will be complete next week!
