Unfortunately not. Midweek gigs are a nightmare for me. I’m at that Hac Warehouse project thing Saturday with the Primals headlining. I think there’s every chance that might kill me.

Yeah he joined them for the Vanishing Point album, just after the Roses called it a day. You’re right though. He and Shields were a tour de force on those turn of the century Primals material.

I’m wary of buying more rubs and stuff. Our cupboards are bursting with spices. Every time I go an Asian or Chinese supermarket and picking more stuff up. I’ll make a note of that gyros stuff though. 😂

Oh, maybe add some fresh mint to the meat mix too. I had coriander but either would be good.

It’s all over FB. Anyway, get the balance of spicing right and it’s totally bang on. I used this for 1kg of mince (half 5% fat beef, half 12% lamb). The tweaks I’d make is make each roll as thin as possible) and possibly add some lamb stock to increase juiciness. Grill at end for 1 min too.

Ooh, did that viral doner kebab fakeaway thing tonight where you flatten spiced up minced lamb / beef in paper, roll it up and cook it. A totally strong 8/10 which will achieve full marks with a few wee tweaks. 👌

Off to bed. Told Mrs I’ll wake her up on the sofa when I come downstairs at 3am.
