In no way am I qualified to teach anything, However, if it was my job I would not show up to teach the topic a week late, unprepared, waste everyone's time, with all my insecurities and issues on display.

Add some plain yogurt and beat it again. Add buckwheat flour, a little at a time, stirring in gently with a fork. I like the batter to be thick but easy to pour. Cook it like a regular pancake.

Beat one egg and olive oil (I don't measure, I just pour in enough). Using the butt end of the fork to measure out: a little salt, a little more baking powder, a bit of nutmeg, a scoop of ginger, a scoop of cinnamon. Beat all that. Start to heat your little crepe pan.
