Finally, with an A1c of 11.8, they said Insulin Resistance. Started me on Jardiance and Ozempic. I didn't have to change my diet, I had been on a low-fat, sugar, sodium, cholesterol, and carb diet most of my adult life. I would have died, within a year. But a Dr finally saw me not just my body.

When I make green salsa, I use green tomatoes, not tomatillos. I cut them up, into a heavy pot that I put a rack in to keep them out of the 1/2 cup of water added to steam them. I don't peel them or remove the seeds. Just chop and steam, until they fall apart. Take the solids, and add the rest.
