Much better. Only notes were more garlic in the tzatziki and less onions than Bittman said, as we surmise our onions out here are giants compared to NYC. You could easily make the tzatziki and mix for the Kibbe in advance and put them in the fridge, leaving only cooking the Kibbe to the end.

This time the Kibbe stayed the same, but I cut up the pita into wedges, bought some hummus, made some tzatziki (very easy and tasty recipe at Love and Lemons) and just served everything as appetizers along with cherry tomatoes. Should have cut up the leftover tzatziki cucumber into spears.
