Proxima Centauri 🇨🇦🏳️‍⚧️🦄 🧷🍼

This was my take on the Wendy’s Bacon Mushroom Melt Burger, which is one of my all-time favourites. The problem is, Wendy’s only has them once a year (if at all) and the closest Wendy’s is about a two-and-a-half hour drive away (each way!) So with that in mind, I decided to try to make my own. I started off by cooking up some thick-sliced maple-smoked bacon, cutting each slice in half. When the bacon was done I set it aside, saving the fat for the cheese-sauce roux and for sautéing the mushrooms. What makes the mushroom melt burger so good is the mushroom-cheddar sauce, so that was the next step: I made a roux using most of the bacon fat, keeping just a bit of it to sauté the mushrooms in the bacon frying pan while I prepared the roux in a medium sized pot. I used 2% skim milk for the body of the sauce, adding some cubed Velveeta and a LOT of Old Cheddar once it started to thicken. The point of the Velveeta is to help keep the sauce nicely smooth and blended - I find that without it, the sauce isn’t as smooth and can separate a bit as well. The mushrooms were just nicely browned as the sauce was ready, and I dumped them into the sauce pot, blending everything together. The hamburger patties are 6oz hand-made patties of lean ground beef, with just a bit of Clubhouse brand Montreal Steak Spice added in to the mix. No other spices or fillers were added to the meat. The patties were fairly thick, so I grilled them for five minutes on each side over medium heat. The bread is Rye Bread, buttered on both sides and then grilled for 1 minute on both sides. Both slices are grilled at the same time, and once done everything comes together: A slice of processed (American) cheese is placed on the bottom bread slice, followed by the (hot) hamburger patty. The mushroom-cheddar sauce is then liberally applied over the entire patty - use lots, it’s SUPPOSED to be messy! The bacon slices are next, followed by the top slice of bread.

A recent thread about good places to go for a burger reminded me of this. Here in Canada, Wendy’s has their Portabella Mushroom Melt Burger available again. I love it, but they only have it for a short time each year, and the nearest one is 2.5 hours away. So I made my own:

As an occasional visitor to your county, Jack In The Box is something I actively seek out. I got hooked on their Sourdough Jack and Ultimate Bacon Double Cheeseburger, and it’s probably a good thing I’m thousands of miles away from the nearest one. 😅😋

It’s been over 14 years since the last time I had Jack In The Box, but I fondly remember that burger. It’s a heart-attack in a bag (if you get it as takeout) but it’s sooooo good!

My favourite though, was their Sourdough Melt. 😋

That might depend on your browser Dandy. While the coding for NT is VERY basic and should work on ANY browser, I found some don’t. Apple’s Safari for example, doesn’t like the drop-down menu. Firefox seems to work just fine.

Oh Lordy… At first I was JUST a “DL” - I wanted nothing to do with these weird, freaky people depicted in the media at the time.

Then I met Karis @karisplayground.bsky.social (we lived in the same city) and realized that most REAL ABDLs were pretty awesome people. The rest is history. 😊
