I miss having someone to cook for, so it was nice to make even this simple, casual meal for a visiting friend. Roast beef, potatos and gravy with what’s-in-the-crisper salad (asparagus, capsicum, cherry tomatoes, capers & feta).

I used to do this and put it in mason jars, where it would slowly get redder and more delicious over the next few days. Crystallized ginger is a good addition! My fave was orange, vanilla & grated ginger too.

Sometimes I food process a bunch of onion, celery and carrot to make & freeze sofrito. More work but then it’s so easy to make a really tasty dish.
