I’m now experimenting with discards and I tried the dough before I let it sit: sour but sooo chewy

Which means u will run out of flour real fast. Those starters are hangry so u need to add a lot of food. If u discard a portion, u don’t need to add as much as that. My temporary conclusion anw

But I still don’t have kitchen scale and I use my own instincts to determine how much it is to feed. Basically I refuse to learn from theories and only want to learn from my own mistakes. Anw I think it’s not that u need to discard a portion exactly, but then u need to add SO MUCH MORE flour

My Ketu afflicted 3H Virgo Merc-Mars-Jup is so loud bc at first I was skeptical why I had to discard a portion of sourdough before feeding it again; my not doing it resulted in dead starter. Then I tried again, doing discards and then feed it. It worked this time

Kefir adventure: after I fermented my kefir I usually add some milk and wait around 30 mins - 1 hour and it becomes more creamy bc the additional milk gets fermented further
