A partially consumed Trader Joe's Toasted Coconut Mini Sheet Cake. Partially consumed because while it is not good, it's still cake.
I regret to inform you this is not good. The cake is dense and gummy, and so is the frosting. I believe a coconut cake should be light and fluffy and so should the frosting. Even if you think cream cheese frosting belongs on a coconut cake, I think we can agree that cake should not be gummy.
