As a child Gaelio points out McGillis eats super fast so I kind of think he's self conscious about eating in front of people, in case the wolfing things down instinct shows too hard even now (he's very much trained himself out of it though, it's just lingering discomfort)

It's a show about hunger and McGillis always has treats but unlike the less repressed characters you never see him eat, just give food away.

Chocolates as representative of a treat for the wealthy that he couldn't have as a kid and now clings to.
