This phenomenon is known as 提笔忘字 (tí bwàng zì) which literally means "pick up the pen, forget the character."

In English, it's simply known as Character Amnesia.

in China, pīnyīn and the entire Romanized alphabet is understood, and their tech typing system is based off of it. I.E. sun'w'k would autocorrect and output the characters 孫悟空 (pīnyīn: Sūnwùkōng)
