Alicorns still live for a very long time but they aren't exactly immortal in the Au. The reason Luna is still alive is that her aging was halted/reversed when she was imprisoned on the moon.

Redesign Idea. The current Princess Celestia was just a statue real Princess Celestia reanimated to continue her work until a pony could take over as ruler. The reason she doesn't help Twilight and the others when problems arise in Equestria is that the statue is fragile.
