The real number is like 1120 & some change but I can probably swing the 120 myself since the monthly payments are close to that. If I keep paying monthly, I still owe a lil over 1700. Full story is at the link but the gist is I've gone back n forth with the company for a month to try n get my bike fixed just for them to tell me the motor is out of stock & there are no current plans to restock it. Which means I have a $1300, 67lb paperweight. 1/4

If I could stop getting these... ugh. I mean, I'm usually some level of *prepared* for the bad news thanks to them but DAMMIT.

Add pumpkin puree & sauce base + 2 bay leaves & a lil water to thin if needed, cook down at a simmer (med-low heat) for ≈ 20 minutes. Add pasta or rice or whatever & enjoy. Has like 43g fiber & a bit more than that in protein for the batch. 💖 & at least for me it cost like ≈ $12. So.

-In a pan on med heat at 'bout a cup of diced white onion in ≈ 2 Tbsp avocado/veggie oil. Cook with some salt, pepper & paprika until translucent then add–
-As many mushroom or other vegetables as you wanna add, cooking until onions are caramelized & veg are cooked

Add a lil water if necessary along with 1 tsp each oregano, basil, thyme, garlic powder, onion powder, pepper & better than bouillon roasted chicken base. Blend til smooth. This is your base. Add the pumpkin to this (if your blender has space, blend it with it. Mine didn't so—)

Before everything else, ya wanna microwave 105g (3 - 35g servings) of red lentils with about 2 cups of water until they're soft enough to blend smooth. Add them into your blender with a can of your fave diced tomatoes. I used fire roasted romas 'cause thats what I had.

Everything should be able to be found at either Kroger or Aldi too or whatever other small grocer – depending on what you have near you, so no boycotts were broken in this 💖 #freepalestine 🇵🇸 #freesudan 🇸🇩 #freecongo 🇨🇩

Made some pasta today & sauce for it using some canned fire roasted tomatoes, pumpkin puree & lentils. Very nutrient-dense, low in the acid department despite being tomato based (kinda) thanks to everything else, filling, YUMMY aaaaand inexpensive. 1/

The curtain to my bedroom! Finally up, it's now separated from the rest of the apartment by a super pretty black / purple / blue / white fantasy themed tree & night sky with moon curtain.

Allll my nightmare before Christmas collection in one place (except the one mentioned earlier). Left to right we have a Santa-Jack & Sally giant pilsner, a many faces of Jack coffee mug, Jack & sparkly purple stemless wine glass, Jack pint glass & Jack soup bowl with handle. 3 shot glasses are in front of these with Jack, Oogie Boogie & Sally on them.

Between Mischief & Magic by Marissa Serrao - currently on page 120 or so. Very cute so far. Definitely loving it & already recommend.

Birria & Asada tacos from El Taco de Ojo in the Glendale/Phoenix area. Very, very delicious. On small corn tortillas & topped simply with diced red onion & cilantro & a squeeze of lime. 🤤😋

My bathroom – got my shower curtain up & can finally hang the art I bought from a friend so many years ago. I think it fits well with the seahorse shower curtain & black/grey striped rug.

Over the door SPICE RACK! Also holds all my teas & coffee & wax melts. Will edit with full list at later date.

Gluten free cake made Celiac-Safe for my niece's birthday celebration! Filled with a whipped dark chocolate ganache & topped with (not in the photo) a whipped caramel frosting which didn't turn out how I wanted but still tasted amazing. You would literally never know this is a gluten free cake. It's moist, it's soft, it's just like a gluten cake – but better because everyone in the house was able to enjoy it. 💜 & my very picky 9 year old niece loved it. If you know kids, you know I'd have been told right away how icky it was if it wasn't up to par. 😉

Small 2ml glass dropper vial with liquid that does a kinda translucent yellow to opaque dark green ombre effect. I diluted German Chamomile oil, which is typically a very dark blue color, in jojoba oil to more easily play with it while teaching myself Perfumery.

Vanilla Greek yogurt topped with homemade orange curd, sliced strawberries & a drizzle of dairy free dark chocolate ganache. My favorite breakfast for a while there – until my stomach rebelled enough about the amount of lactose 😅

Linguine with eggplant based sauce & fresh basil with a background of some oranges, a candle & B. Dylan Hollis' book Baking Yesteryear. Sauce is completely dairy free (& vegan) & super silky. Very yummy.

A cow tale candy birthday cake for a coworker whose favorite candy is them. Outer edge of the cake has cow tales standing on their ends, showing their centers in the flavors of strawberry smoothie (red with white center), caramel apple (caramel colored with red center), honeybun (caramel colored with white center) & chocolate caramel brownie (dark chocolate brown with caramel center). The top of the cake has whipped white chocolate ganache frosting with a homemade caramel circle at the center & one single wrapped mini cow tale at the center of that. Coworker very much appreciated the cake as did anyone he chose to share it with :) Also! Cake inside was gluten free. I made a separate version for my friend with celiacs without the cow tales but with everything else. Can't even tell it's gf. 💜

Dishes dishes dishes! A cabinet with three shelves. Bottom shelf holds large square/wavy dinner plates & medium sized square/wavy plate-bowls in a white & grey marbled design. Next shelf up has small cereal bowls in that same style along with two oil-stain type rainbow teacups with matching saucers & rainbow stainless steel ramen bowls. Top shelf holds (left to right) - 2 stemless martini glasses turned on their heads, 2 mini coupe glasses that hold about 2oz of liquid a piece (they're cute & sometimes I drink water out of them), a witchy coffee mug with a black cat & books on it, a shot glass with Zero from Nightmare Before Xmas, 2 highball glasses, 2 small dark red goblets on their heads & a purple sparkly Jack Skellington mug.

Uh yeah seems to be a once every 2 months thing 😅😅😅

My tea set finally has its own spot (pale turquoise cups & pot with gold veining throughout & light wood - almost oak like - platter(?) to place them on).

Ritz crackers with various toppings – all of them have Cajun smoked salmon on them. One has arugula + a drizzle of truffle balsamic glaze. Another some avocado & another some lemon bar goat cheese & sweet chili sauce (the favorite). Arranged prettily upon a white & smoky grey porcelain plate made to look like marble.

A flag / sign that says Everyone Is Welcome Here with rainbow colors & a little Love Is Love heart in the lower left corner. Hangs up on a beige wall near a bright fan/light & wooden table.

Citrus bread pudding with creme anglaise, strawberry sauce, homemade orange curd & some fresh strawberry slices on the same white & smoky grey marbled plates as the last one. A rainbow stainless steel fork can be spotted in the upper corner as well.

Haven't been on here much but... I moved! I've done a little decorating & a little eating of pretty things & mostly a lot of working still. Sooooo here's a lil life update via photos ~
