highly suggest mint or fedora to start, tho my personal choices will always be arch based distros
touchscreens typically work fairly well with linux now, but if for some reason yours doesn't try a few other distros or even forks of fedora

with most distros, there's a slider in gui for it, tho terminal is always an option

now how about you figure out how to get high mouse sensitivity on mac. actually using it, not just looking it up,
cause without mac's terminal you only get slow or slower as your options
