tl;dr white, green, oolong, yellow (weirder/rarer), black can all be loose or pressed into cakes.

Fair -- I still regret losing my copies of Zoo Tycoon 1 and 2. They were just more fun in their wonk and limitations, somehow. And the easter eggs.

Dwarf Fortress is arguably the 400-pound-gorilla in the "why would you include this level of insane granularity" sim room, though it is less specific to an individual scenario.

And of course the Farm Sims (Farming Simulator 25), Mechanic Shop Sims, Pressure Washing Simulator, etc.

At least some weird and highlu detailed sim games are still being released -- Planet Zoo, as the spiritual successor to the Zoo Tycoon series, has absorbed more playtime hours than I would care to admit. It's been around since 2019, but it's still releasing periodic content DLCs.
