Weirdly, the error was with the API I was making a request to (422 unprocessable entity), because something between the undici fetch and the built-in FormData (including file upload) didn't agree. I'll do some more investigation and write it up.

PSA: if you're working with Node.js, don't use undici and expect it to work with the built in FormData object. You've got to go full undici, or fight unhelpful errors until you realise what you've done.

I'd be interested to read. I also need to write my thoughts down.
