Correlations are one form of evidence especially when phen. control can cause the phenomenon and there are clear demand characteristics. Phen. control then provides a simple explanation. In the case of the rubber hand illusion there is also causal evidence, as in the paper I linked to previously.

Nothing to do with how compelling comparative cognition is. For these studies, there is a difference between octopuses and people: octopus may become genuinely confused given the information, whereas people know the rubber hand is a rubber hand. That makes what is being tested radically different.
