So to educate vegetarians who in some parts of the world when they say they're vegetarians get served chicken and then when repeating that they're vegetarian get told "It's not meat, it's only chicken." #ChickenIsntMeat 😁

And there's even the option of scrambling eggs into your bhajja begun bhorta, a bit like Iranian mirza ghasemi. So it's all much more sophisticated than simple "Eggplant Curry".

Also, if Bengali this is bhajja begun bhorta where the onions are fried & the mashed aubergine is refried versus kacha begun bhorta where the onions are raw and the mashed aubergine isn't refried. I love both. So even begun bhorta isn't just begun bhorta!
