Yes you can do that! For arm physics you also put the sleeves in the same arm deformer! You can also make another deformer for the jacket later on to adjust the angles too^^ Hope that makes sense xD

One of these Days I will find time to rig my new model!

I would rig it separately! Makes it easier later on incase you want more outfits too!
