From 1975, Joy of Cooking HAM HOCKS WITH SAUERKRAUT A tasty dish rather heavy in fat. Rinse and put in a pot half filled with cold water: 4 smoked pork hocks Add: 1 sliced onion 1 bay leaf Cover the pot and simmer about 1½ hours. Turn the hocks several times during this period. Drain. Return the hocks to the pot with one cup of the drained, degreased liquid and: 1½ to 2 lb. drained sauerkraut 2 large cored sliced apples 1 teaspoon celery seed Cover and simmer about 30 minutes more, stirring with a fork several times during this period. Serve with: Mashed Potatoes
