That's really interesting honestly. I wonder if it's something to do with like being able to connect better. I built a Human once but never got to play him. He was basically a typical Grill/Tailgate/Lawnmower Dad, isekai-ed into The Forgotten Realms. Very silly, hope to play him one day.

I don't think I've ever DMed a Human character, lol

I typically don't have restrictions on species, and I actually feel the opposite. Letting a player have fun and run what they want if they want is crucial to players having fun at a table, in my experience.

Not saying that's for everyone just me
