This will give you a deep brown rich broth. Not that pale wimpy stuff you get in cartons.

Take your bones, put them on a baking sheet (or 2) and roast them in a 350 degree F oven until they get dark, golden brown. Usually 40 minutes or so for me. Then boil them in a large pot with the herbs you like in your soup. Rosemary, thyme, and sage for me. More recently, I use a pressure cooker.

I've done it for several years now. And it works a treat. I combine it with brining overnight which makes for a very good turkey. Highly recommended. And the turkey spine you cut out becomes part of the turkey bone broth you make on Saturday.
