My downfall is Chile Verde with lots of tender, fatty pork chunks, lots of roasted chiles and don't forget a couple Tomatilloes & a good pinch of Mexican Oregano! Difficult to find a good one in a restaurant here.

I'd make hard tacos more often if I could find good shells. Frying my own is a pain, so I often opt for Tostada. I went through a few months during covid craving tostadas. I swear I ate at least 2 a day.

Just down-valley of Aspen and they are everywhere here, too. I still miss the Arizona way of Mexican food. Colorado just doesn't compare. I mean, enchiladas are pretty hard to screw up... and Chile Verde? Depressing. Tacos are the safest thing to order here and sometimes that's even iffy.

I've been doing my own refried. IP & a good old cast iron skillet. Way easier and better than I had thought it would be. They freeze well. The last one was pretty freaking spicy, but I sweat my way through them. Lol.

Taco everyday.

I lived for a fairly short time in Canon City, CO. Half the population were guards & their families. A big portion of the other half were inmate family. There were a lot of illegal activities with each side.

Why would they run? They'd open the cells & gates, pick up their automatic rifles, and gun them down as the prisoners & saviors run away. They'll shoot them in the back and testify that it was self defense - afraid for their lives.

Adapting Putin's idea? Kidnap, imprison, train for your private army?
