Even with a social media platform that generally caters to a vast variety of people, there are only so many people around.

Gouache is a wonderful but fickle medium, really and the layering works a little differently to watercolour although you should still keep to the thick over thin rule.
and the pigment used. I found that Daniel Smith overall reactivates the best with Holbein and M. Graham being close seconds, but even in those brands there are some pigments that just don't do well with reactivating.
That said: I have my gouache in a dried palette and it works just wonderfully...
It will also never reactivate to the same thick, creamy consistency it came out of the tube as, so if you need that (which you might want especially for white to paint final highlights) reactivating is not the way to go.
Then lastly: how well the gouache reacts is different by brand...
Gouache and reactivation is a bit of a tricky thing. It doesn't reactivate as readily as watercolour because of the higher pigment density and larger pigment particles. Just less water getting to the binder to disolve it. So it takes longer to reactivate (needs some soaking)...
