I was the same but they're actually pretty easy with a stand mixer! I use a king Arthur baking recipe. The key is to use high-gluten flour and non-diastatic malt powder.

Tried out a skibike for the first time yesterday. Sooo different from snowboarding. Really beat me up but I started to get the hang of it by the last couple runs.
