It's like, if you want to make 20kg of sandwiches, you have to do about 20x the work of making 1kg worth of sandwiches.

If you want to make 20kg of soup or plov or ajvar, it's like twice the work of 1kg. Very economical to scale up. It doesn't make sense to make these things in small batches. XD

Yeah, traditionally the way it's made is in a comically oversized kettle by someone's grandmother with Popeye the Sailor forearms and a spoon the size of a row boat oar. A lot of those dishes benefit a lot from scaling up production.

I used to be able to get ajvar and pasztet and canned sprats and all kinds of different Eastern European foods at my local Woodman's, but they neutered the segregated foods aisle and now it just contains mostly white girl friendly Asian inspired ready to heat stuff and a lot of instant noodles.
