I cook it slowly on a (very unreliable) cooktop to the color of mahogany — really makes a difference. Sometimes I cook it the day before and chill it. Next day I skim a lot of the hardened fat off it (there's about >1/2") then add shredded chicken and andouille – cook another few hours.

I slowly cook my roux to a deep mahogany.
Spicy andouille is a must.
