I am thankful for my perrita compañera, Charlie. I am so lucky she adopted me.

I need to return to the USA to deal with some bank issues. It makes me nervous to be in a country where violence is condoned and even celebrated at the highest levels of government. I won't feel totally safe until I'm back in México.

In México, gas is delivered in 30 liter tanks. You discover you are out of gas when your stove doesn't light. That just happened to me. Tomorrow morning, I'll listen especially carefully to the man yelling, "gasssssss" outside my window, and I'll run out and exchange my empty tank for a full one.

The same is true here in México. It seems weird when I go back to the USA, and nobody says hello.

It is long and complicated. If I could find it locally at a reasonable price, I would buy it instead of making it. Basically, you need to do the following with the soybeans: soak, grind, cook, separate, cook again, coagulate, press, and store. And every step involves cleaning.

My last batch of tofu.

Tofu is hard to find in Guanajuato, Mexico, and expensive when available. So I started making my own. At first, I was dismayed at the amount of waste, but then I discovered that the "waste" is Okara, which makes fantastic vegan burgers. Now I like the "waste" more than the tofu! #veganfood

Guanajuato put up a carousel for Christmas. I'm not sure this guy wanted to be part of it.

Tempeh is a vegan food made from fermented soybeans. It originated in Indonesia. It is VERY healthy.

After innoculating the lightly cooked beans, I pack them fairly tightly in plastic sandwich bags, puncture breathing holes in the bags, and then incubate them. This is soy tempeh.

Taking the day's yield of tempeh out of the incubator. I started with 800 grams of dry soybeans. I ended with 1500 grams of tempeh 56 hours later. #veganfood
