Yes, i love that pudding farming joke, i say it too. I love that nethack has many different playstyles. I mean, i let my pet do the heavy lifting, but it isn't *wrong* to just play without a pet at all. (although i do understand why pudding farming was removed)

also, if you want to use the nethackW.exe and also use ascii, you need to add "OPTIONS=map_mode:ascii_fit_to_screen" to your config file, otherwise it will be tiles.

If you are playing in a terminal or similar, maximizing the window is going to look weird, but changing the font size can help. If you play on windows there is a "windows" version you can run that will behave more like you would expect, it is NetHackW.exe in your nethack folder.

It is *very* winnable

Disengage? Either scare the monster (Elbereth, bugle, tooled horn, scare monster scroll, camera, etc) or use an escape item (teleport scroll/wand, cursed potion of gain level, wand of digging) or outrun them (speed boots, intrinsic speed, wand of slow monster, etc)

Just run up to the previous level and rest on the stairs there, if you are worried about being attacked there engrave and Elbereth

Change the font size if you want to make the screen bigger

That looks cool, certainly looks like a roguelike. Either my memory is worse than i though or i somehow missed this game from back then.

Of course the save scumming lol. I get it though, I would play nethack in explore mode locally when i was young.
