The data will still be registered to you, and anyone that knew you by your DID will still point to you (e.g. have you in their friend list). While Bluesky would still have your identity banned, alternative apps and networks can still see you and make use of your data and the data that points to you.

Your PDS is your "folder" with all your data in any ATproto app (like Bluesky). Your DID is your identity on the network, that is "you" across all ATproto apps. If you have recovery keys for your DID (identity) and a backup of your PDS (data) you can add your data to the network again if deleted.

If you're uncomfortable with Bluesky owning (and being able to delete) your data but don't want to go the whole way to self-hosted/another service, you should:

1) Register identity recovery keys, which will allow you to point your current identity to a new PDS
2) Backup your PDS periodically
