Two recommendations: Topsell's History of Four-Footed Beasts (1658) + Fox-Davies' Complete Guide to Heraldry (1909), both easily found online. I referenced both for these pieces.
It's fascinating to see that the modern animal encyclopedia & the TTRPG monster manual essentially have the same roots.
Also, I love actually reading old bestiaries because they're so full of weird ways of thinking.
A pelican stabs itself in the breast and feeds its babies on its blood?
Goats horns are good against venom? The blood of a goat can destroy a diamond?

Also, one of the nuns is a secret ghoul, and maybe nobody will notice, but in the list of ghoul names in the monster book, each of them starts with G, so her name starts with G too.
Writing a horror mystery adventure right now and doing my best to make sure every NPC's name is memorable and gettable. For example, every nun's name starts with a different letter and every name sound like *a name* and not generic fantasy gibberish.
