Opened up the back kitchen this weekend, and added a new stainless prep table, did some rearranging of what cookers I want out back. Refrigerator, freezer, & Ice maker are cleaned and sanitized and turned on, tv is hung up.

I had the urge to make some pasta today, and had some left over all day red sauce in my fridge, so I decided to do a little riff on Pasta Puttanesca, although this had a bit more sauce.

Fired up my weber Summit Kamado today, BB briquettes, pecan, & oak splits for a rack of Dino Ribs, simmered a batch of beans in a bone stock I had made prior, slice of sourdough, and my roasted potatoes and carrots.

Most of my fermentation for bread or pizza, goes 48 - 96hours depending.

No, not specifically, I do have a refrigerator in my house though that I do not keep any food in, just dough projects, so I can turn the fridge to be a bit warmer. But no proofing boxes per se.
