When I knit, especially a pattern with simply garter stitch or stockinette, I get in a rhythm and my heart rate slows, my breathing is deeper, and the repetitive motion calms my tremors. Definitely one of my anxiety and agitation coping strategies

For small amounts, use bobbins, and keep them on a short lead. I don't know how many colors you're working with, and whether you're working flat or in the round. Usually every row or two I stop and sort things out.
