In Colorado it's definitely best practice to wash soil from the roots before planting, so i grow them to small/medium size, wash the soil (let it dry out and save it for next year), and split the plants as part of the planting process. Ends up being pretty efficient with materials and seed

I like starting them in pots because then i can intentionally place whatever grows into the most desired locations. I make little cages out of hardware cloth to protect them from squirrels, rabbits, and my feet for the first year.
