This year I am making myself a semlor-inspired birthday cake at the weekend - Samin Nosrat’s almond cardamom cake, which I will torte and fill with whipped cream!

Semlor are a lightly sweet cardamom yeast bun - you hollow out the buns, mix the guts with almond paste and milk,& put that mixture back into the buns. Pipe on some whipped cream, put the lid back on, dust with powdered sugar. DELICIOUS. ScandiKitchen has them, highly recommend if you can get there!
