Is the game is only being ran on one system, not on each switch here.
The switch 2 is rendering an instance for each player and streaming it to the switch 1s, like the Wii U did to the gamepad(s)

For multiplayer on Wii U;
One player could be on the TV and the other would have the Gamepad, so everyone had their own Fullscreen view.

They originally planned for multiple Wii U gamepads to be connected, which would then allow Individual screens for more than 2 players, but it fell through.

Yes, anything up to Mariokart Wii can be emulated damn near perfectly in Xbox dev mode, with 7 running poorly.
