You don't see the bottom of the truss so you do your best ,some better than others modern shops have a laser that shows the whole truss and plates we didn't have one

Yes our garage in the 70s we did the same, its actually still acceptable to use plywood instead of plates,we had trouble with guys placing the plates properly on the bottom side and we would go to the sites and hammer plywood on
