Jar minced garlic might be a solution. Or jar peeled whole garlic.

For mincing I use a fake slap chop or a garlic press (that might still be a sensory nightmare).

For peeling garlic I have a yellow garlic tube that you roll the garlic in and it helps take skin off without touching it.
