I have to use Windows as my main OS for the company, but would like to use Linux docker containers for development tests in BC, so more or less the opposite. Are there any discussion around that ? (Running BC services on Linux) Know that MS is working on it, but dont have the latest on that topic

But there is a more elegant way: Through the BC artifact URL proxy, a simple HTTP request is enough and to make it even easier for your pipeline runs, there is now also an Azure DevOps extension utilizing the proxy. It depends on how the rest of your logic is implemented, I would have some data validation per document so if something breaks, it would just stop. Somewhere, you need to handle the integration part. Perhaps logic apps outside of BC?

We have built different mappings, mostly generic to temp records, and then some logic processing from those records to bc documents. Sales orders and so on. I have also created a factory codeunit to return an interface with functions, to parse a xml/json documents like next node/child object.
