Because spoken colloquial Cantonese is usually considered less formal and, therefore, less "serious", with dialect-specific characters like ๅ
in place of ็ (even though you can pronounce ็ as ๅ
). Cantonese is perfectly capable of pronouncing the same written Chinese text just like Mandarin, anyway.
