β€˜I’ve never known fear like it’: Tom Kerridge on booze, bad-boy chefs and the crisis for pubs and restaurants The Michelin-starred chef prides himself on his β€˜socialist’ business empire. But the hospitality trade is struggling – and so are his staff. What would he change if he had the power?

YES Tom!

β€œThe thing I love about British pub food is we don’t think it’s weird to have a Korean spiced mackerel dish followed by north African lamb tagine and then Sussex pond pudding,” Kerridge says. β€œYou wouldn’t get that in France.” www.theguardian.com/food/2025/ma...

I’m on a run of eating at some very disappointing new restaurants. Six in the last month. I’ve never had such a streak of duds before. Big name or new-young-cool chefs cooking boring food in expensive fit-outs and great locations seems to be the new thing. What’s going on..? πŸ€·β€β™‚οΈ
