Since I keep getting asked, I tried pressure cooking camas. Did it work? Sort of....
Some years ago I cooked some test bulbs in a water bath (sous vide) and while they cooked they didn't taste very good
That's my impression of the pressure cooked camas, done but not very good

It's late for harvesting it (you can see the bulbs sprouting), I more commonly harvest it in the fall, but I've cooked it in October, May, and July and it is always sweet.

Camassia leichtlinii (more commonly known as great camas), actually in the Asparagaceae. They were the staple crop of Native Coast Salish families here until around 200 years ago. They store their energy as inulin, so to make them digestible I'm going to slow cook them 36-48 hours.
