Grain of Terror Why is the Western world so afraid of reheating rice? Joe Zadeh reports. Illustration by Ibrahim Rayintakath

Fascinating essay on *why* some cultures are terrified of reheating rice and others just...do it every day.
The justification cycle - racialised thinking, call to science, appeal to long past and/or 'traditional' wisdom - seems universal for this sort of food story #histFood

I've written about how my troubled relationship with food was helped by "ratting" – the decadent habit of restaurant staff scarfing customers' abandoned food, and one that gives a thrill in the domestic kitchen. The ratter, you see, is hornier than most...

In the past, in my experience, bad customers were mainly either drunk and entitled or else minor celebrities, the kind who have tasted just enough fame to be complete arseholes; Graham Linehan, for example, seemingly made a point of always coming in five minutes after lunch service had started and asking for breakfast while his companions ordered from the lunch menu. β€œThey’d tell him to fuck off at McDonald’s,” we’d mutter, but make him his bacon sandwich anyway. In fact, we would have told him to fuck off too (rather more politely) if he hadn’t been then-beloved sitcom writer Graham Linehan, years before his reinvention as extremely divorced transphobe. We should have realised.
