08.12.2025 20:50 — 👍 316 🔁 6 💬 6 📌 0It can be. You gotta put the cheese in vacuum sealed bags because as you pull the cheese off the smoker it’ll be too smoky to eat immediately so it needs to have time to settle and allow the smoke to seep deeper.

I pull them and let them sit on the counter for about an hour to let them sweat their oils. I pat them dry & place them in vacuum sealed bags for at least 2 weeks before consuming.

Smoking some sharp cheddar on the bottom rack. Then colby jack, small brick of pepper jack, and small brick of extra sharp cheddar on the top rack. They will be good to go once they rest for 2 weeks in the fridge.
