It ain’t *cannon*, but my take is that it has to do with their telepathy. Like—the holodeck didn’t for Vorik, but it DID work for Tuvok, who has a wife.
There’s a lot of beta canon about vulcan marriage bonds, but I figure that if that telepathic spot is filled, they can get away with jorkin it.
It’s implied that amok time was his first time, so it makes sense that it wouldn’t come up!
